Roasted Veal Fillet and Artichoke

  • 2 x 200 gr Veal Filet 
  • 3 pcs of artichoke 
  • Palm full of Pearl Onions 
  • 1 Piece of White Onion 
  • Garlic 
  • Fresh Rosemary 
  • Swiss Chard 
  • Vegetable Stock (Homemade preferably) 
  • Extra Virgin Olive Oil 
  • Sea Salt 
  • Pepper

Clean and prepare the artichokes for cooking. Keep them in water with lemon.

Clean the meat if it has extra fat.

Place the artichokes and pearl onions into the pan. Add extra virgin olive oil on the top. Add chopped onions to the pan.

Besides the cooking artichokes, warm up a grill plate for the filet. Add some extra virgin olive oil on the grill plate and place filet and garlic. Season the meat with sea salt, pepper and fresh rosemary.

Add a bowl of vegetable stock to the artichokes cooking in the pan and let it cook for 30-45 mins until artichokes softens and caramelized. Add also Swiss chard to the grill plate to give extra taste to the filet. After the artichokes are ready, get one of the artichokes into a bowl with the sauce cooking. Blender the artichoke and the sauce.

Place the artichokes to the plates, add the ready sauce on the top, slice the roasted veal filet and add on the top. Decorate it with Swiss chard and voila.
